Overview
Discover the Heritage of the Poljica Republic: A Culinary Journey to Gata
Just a short drive from the coastal crowds of Split and Omiš lies Gata, a picturesque village nestled at the foot of Mosor Mountain. This is the cradle of the historic Poljica Republic and the birthplace of Croatia’s most famous traditional dish — Soparnik.
Soparnik is a savory pie filled with Swiss chard, spring onions, and parsley, baked between two layers of thin dough. What makes it truly special is the traditional preparation method: it is baked directly on the stone hearth (komin), covered with hot embers and ash. This ancient dish is so unique that it is protected by UNESCO as a piece of intangible cultural heritage.
On this tour, you don’t just eat — you become part of the tradition. You will visit a local OPG (Family Farm) where a local domaćica (hostess) will welcome you into her home. You will roll up your sleeves, learn the secrets of rolling the dough with a traditional sinija, and witness the magic of the open fire. This is an invitation to taste the history, passion, and soul of the Dalmatian hinterland.
